Venison chops with apple sparkling wine and caramelized pears
INGREDIENTS (serves 2 people)
For the venison chops with apple sparkling wine
• 2 venison chops (1 per person)
• 1 tsp. no-salt seasoning mix
• 2 sprigs thyme
• 30 ml (2 tbsp.) oil
• 30 ml (2 tbsp.) brandy
• 200 mll (4/5 cup) apple sparkling wine
• Salt and pepper
For the aromatic garnish
• ½ stalk celery, diced
• ½ carrot, diced
• 2 grey shallots, chopped
• 1 apple, sliced
• ½ yellow pepper, diced
• ½ leek (white part only), thinly sliced (2.5 inches long)
For the caramelized pears
• 2 quartered hard pears (not too ripe)
• 50 ml (3.5 tbsp.) apple sparkling wine
• 30 g butter
• 2 tsp. sugar
• A pinch of salt
DIRECTIONS
Chops and vegetables
- On a large plate, sprinkle the chops with your seasoning mix.
- Oil the chops, add the thyme and let stand 30 minutes.
- In the meantime, prepare the aromatic garnish that will infuse the meat with flavour.
- Pour the oil into the bottom of a saucepan and sear the chops 2 minutes on each side to medium doneness.
- Smoke the meat (optional), then set aside on a separate plate.
- In the same saucepan you used for the meat, add the garnish and sauté the vegetables 1 minute over high heat.
- Flambé the mixture with brandy (optional).
- Deglaze the vegetables with the apple sparkling wine.
- Reduce gently and set aside for plating.
Caramelized pears
- Melt the butter and make it bubble.
- Add the quartered pears and turn them regularly until they turn golden.
- Add the sugar, the apple sparkling wine and a pinch of salt.
- Continue turning the pears until obtaining a caramel from the apple sparkling wine and sugar reduction.
- Once the pears are caramelized, prepare the plate arrangement.
- Next, reheat the chops in the vegetable mixture.
- Place a small dome of the vegetable garnish in the centre of your plate.
- Place the chop on top.
- Glaze the chops with the pear caramel and gently arrange the fruit around the plate for a beautiful presentation.
